    3-4 lbs of apples (hint 2 apples = 1 lb)
    1 lemon
    Cinnamon stick (2-3 inches)
    1/4 cup dark brown sugar (well packed)
    1/4 cup white sugar
    1 cup water
    1/2 tsp salt
    1/4 tsp nutmeg
    1. Peel, core, and quarter the apples.
    2. Using a peeler, strip 4 lengths of lemon peel.
    3. Juice the lemon into a large  pot. Add the lemon peels,
       cinnamon stick(s), sugar water, salt, and nutmeg.
    4. Bring to boil, then reduce to simmer. Cover and cook for
       25-30 minutes.
    5. Remove the cinnamon stick(s) and lemon peels.
    6. Mash to desired consistancy and enjoy.
    **If applesauce is running, put the mixture back into pot
      and cook on stove to reduce to desired consistency.
