    Red Eye Gravy
    1/2 cup chopped fatty ham scraps
    1 tbsp vegetable oil
    4 thick slices of ham
    1 tsp flour
    about 2/3 cup black coffee
    black pepper and cayenne to taste
     1. Heat oil in a medium skillet over medium heat.
     2. Cook and stir ham scraps until browned, about 5 minutes.
     3. Remove to a plate, reserving the grease in the pan.
     4. Place ham slices in the pan and cook over medium heat until
        browned, about 5 minutes on each side.
     5. Season both sides with salt, black pepper, and cayenne pepper.
     6. Remove ham and reserve on a plate.
     7. Reduce heat to medium-low and sprinkle flour over the pan drippings.
     8. Cook and stir for 2 minutes.
     9. Increase heat to medium-high and pour in coffee into the pan.
    10. Cook and stir until combined and thickened.
    11. Season to taste.
    12. Return ham to the pan to warm through.
