    German Potato Salad (Grandma Coffey)
    1lb bacon
    1/2 cup onion
    3 tblsp flour
    1/2 cup sugar (original recipe called for 1 cup)
    1-1/2 tsp salt
    dash of pepper
    1 tsp celery seed
    1 cup white vinegar
    1 cup water
    6 cups cubed cooked potatoes - undercook so they are tender but not too soft
    2 hard boiled eggs, sliced
    1 tsp parsley
    1 tsp pimento
    1. In skillet over medium-high heat, fry diced bacon until brown.
    2. Remove bacon pieces to a paper towl.
    3. Drain all but 1/4 cup bacon fat from pan and fry onions until tender.
    4. Stir in flour, sugar, salt, pepper, and celery seed.
    5. Add vinegar and water.
    6. Cook and stir til thickened and bubbly.
    7. Reserve 1/8 cup of bacon and add the rest of the bacon, potatoes, and eggs. 
       Heat thoroughly. Tossing lightly.
    8. Garnish with parsley, pimento, and bacon.
