    Bourbon Baked Beans
    1/2 lb thick-cut bacon, chopped
    1 small onion, peeled and chopped
    4 cans (16 ounces each) baked beans
    1/2 cup Bourbon
    1/2 cup barbecue sauce
    1/4 cup strong brewed coffee
    1/4 cup brown sugar, firmly packed
    2 teaspoons spicy brown mustard
    1/4 teaspoon ground ginger
    5 pieces sliced pineapples
    1. In a dutch oven over medium heat, add bacon. 
    2. Cook, stirring occasionally, for about 3 to 5
       minutes or until it begins to render fat & brown.
    3. Add onions and cook, stirring occasionally, until 
       onions are limp and bacon is crisp. 
    4. Drain excess fat.
    5. Add baked beans, Bourbon, barbecue sauce, coffee, 
       brown sugar, spicy brown mustard, and ground ginger. 
    6. Stir to combine and bring to a boil. 
    7. Lower heat, cover, and simmer for about 25 to 30 
       minutes or until heated through and thickened.
    8. Transfer into a cast iron skillet or baking dish. 
    9. Arrange sliced pineapples on top and bake, uncovered, 
       in a 350 F oven for about 20 to 25 minutes or until 
       bubbly and lightly browned.
